Ingredients: 1 cups pie crust dough, chilled. 1/4 cup granulated sugar. 1 tsp ground cinnamon. 1 egg, beaten. 1 tbsp milk.
Instructions: Preheat the oven to 375F 190C and line a baking sheet with parchment paper. In a small bowl, mix together the granulated sugar and ground cinnamon. Roll out the chilled pie crust dough on a lightly floured surface to about 1/8-inch thickness. Using cookie cutters of your choice, cut out shapes from the dough and place them on the prepared baking sheet. Brush each cookie with a thin layer of beaten egg mixed with milk. This will give the cookies a golden finish when baked. Sprinkle the cinnamon-sugar mixture over the cookies, adding a touch of sweetness and warmth. Bake in the preheated oven for about 10-12 minutes, or until the cookies are golden brown and crisp. Once baked, remove from the oven and let the cookies cool on a wire rack before serving.
