For my first pie of 2014, I decided to try a Lemon Chess Pie because I thought it would be a pretty simple place to start - and it was! I used my all-time favorite (tried and true) crust recipe for this one, but next time I'm trying something new.
Something I Did for the First Time: I juiced a lemon (and an orange)! (I know it sounds ridiculous, but that's something I've never done before and it was fun; plus I smelled all lemon-y for a long time!)
Something I Learned: There absolutely MUST be a layer of foil between a pie crust and pie beads when pre-baking. I came to this realization after spending an embarrassing amount of time fishing for hot pie beads in a hot pie plate with hot tongs. I was just so excited to use my brand new pie beads that I may have lost my brain for a quick moment...
Next Time I Make This Pie: I'll let it cool a lot longer before refrigerating it. The pie needed to stay out and continue baking for a couple of hours, but I was too impatient! (Plus, I was watching a Suits marathon and that was maybe taking my attention away a LITTLE bit.) ;)
