Shrimp Lemon-Leek Linguine is a delightful seafood pasta dish featuring succulent shrimp, tangy lemon, and savory leeks. The combination of flavors creates a light and refreshing meal perfect for any occasion.
Ingredients: 8 oz linguine pasta. 1 lb shrimp, peeled and deveined. 2 leeks, thinly sliced. 3 cloves garlic, minced. 1 lemon, zest and juice. 1/4 cup white wine. 1/2 cup chicken or vegetable broth. 1/4 cup heavy cream. 2 tablespoons olive oil. Salt and pepper to taste. Fresh parsley, chopped for garnish.
Instructions: Cook linguine pasta according to package instructions until al dente. Drain and set aside. In a large skillet, heat olive oil over medium heat. Add sliced leeks and minced garlic, saut until softened. Add shrimp to the skillet, cook until they turn pink, about 2-3 minutes per side. Deglaze the skillet with white wine, scraping up any browned bits from the bottom. Stir in chicken or vegetable broth, lemon zest, and lemon juice. Simmer for 2-3 minutes. Pour in heavy cream, stir to combine. Season with salt and pepper to taste. Add cooked linguine to the skillet, toss until pasta is coated with the sauce. Garnish with chopped parsley before serving.
