These Lemon Roasted Fingerling Potatoes are a delightful side dish that pairs perfectly with any main course. The lemon adds a refreshing zest to the potatoes, while roasting them brings out their natural sweetness and creates a crispy exterior.

Ingredients: 1 lb fingerling potatoes, halved lengthwise. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 lemon, zest and juice. Salt and black pepper, to taste. 2 tablespoons fresh parsley, chopped.

Instructions: Preheat oven to 400F 200C. In a large bowl, toss halved fingerling potatoes with olive oil, minced garlic, lemon zest, lemon juice, salt, and black pepper until well coated. Spread potatoes in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, or until potatoes are tender and golden brown, stirring halfway through. Once roasted, sprinkle with fresh chopped parsley before serving.

Cook Time: 30 minutes

tried a greek place nearby for worklunch that was way fancier than the menu prices implied. you don’t expect tablecloths for $8.95. the gyro was unwieldy and unevenly stuffed so i had to do that half bite of meat/half bite of veggies thing. and my hands got so greasy i had to wipe between every bite because i substituted lemon potatoes instead of fries and they were served on the plate.

i think the plate would be good as some kind of composed salad but i had to wolf it down in 15 minutes, after waiting for more than 30, to get back to work. i feel bad because they were really nice but i don’t think i’ll be back. even the people who got salads were waiting forever.
