Ingredients: 4 large potatoes, thinly sliced into shoestring fries. 2 tablespoons olive oil. 2 tablespoons grated Parmesan cheese. 1 tablespoon fresh rosemary, minced. Salt and pepper to taste. 1 cup mayonnaise. 2 cloves garlic, minced. 2 tablespoons lemon juice. 1 teaspoon lemon zest. 1 teaspoon Dijon mustard. 1/2 teaspoon salt. 1/4 teaspoon black pepper. Fresh parsley for garnish.
Instructions: Turn on your oven and heat it up to 425F 220C. Add the shoestring potato slices to a large bowl. Add the olive oil, Parmesan cheese, minced rosemary, salt, and pepper. Toss the potatoes until they are well covered. Toss the potato slices with the spices and place them in a single layer on a baking sheet lined with silicone baking mats or parchment paper. Fries should be baked in a hot oven for 25 to 30 minutes, or until they are golden brown and crispy. Flip them over halfway through cooking to make sure they cook evenly. In a small bowl, mix together mayonnaise, minced garlic, lemon juice, lemon zest, Dijon mustard, salt, and black pepper while the fries are baking. This will make the Lemony Garlic Mayo.
