Lettin it hang ! I converted my apartment into a little chorizo and curing operation when I first started. I’d work all day at the deli walk the streets after work and make chorizo at night let it hang all night for orders to be filled early in the morning. I’d leave all the windows open with a little fan blowing. My neighbors at the time didn’t know what I was up to but they all agreed it maid half block smell good.
