#Repost @dad_beets ・・・ I made shakshuka tacos. Because I didn’t have decent bread. And because I love tacos. And because, honestly, sometimes traditional shakshuka is a little too basic (IMO). I started with 1 lb of chorizo from @thechoriman, added a few handfuls of chopped kale and swiss chard, then chickpeas, poured in a jar of @mina shakshuka sauce, and cooked it down until it was “taco-friendly” (i.e. less saucy than a normal shakshuka). I finished it with crumbled feta, cilantro and the obligatory runny egg... which, for these tacos, I cooked separately in ghee as opposed to poaching in the sauce. I ate three, they were delicious and I have no regrets. (at The Chori-Man)

Lettin it hang ! I converted my apartment into a little chorizo and curing operation when I first started. I’d work all day at the deli walk the streets after work and make chorizo at night let it hang all night for orders to be filled early in the morning. I’d leave all the windows open with a little fan blowing. My neighbors at the time didn’t know what I was up to but they all agreed it maid half block smell good. A friend of ours got a kill this past weekend and offered up the entire thing as his freezer was too full. After just getting back from a meeting in Dallas tonight, I only had time to pull the hind out of the cooler and break it down.

Pictured is one leg broken down, the other not pictured. Oh, and my butchers cut, a teeny lil iron skillet sirloin tip steak just for me.

I have plans for the rest of this dude, that includes stock, sausage, rillettes, top round pastrami, jerky, burgers, steak (backstrap), pot pie with barley, and other shit I haven’t imagined yet.
