So on viewing this movie for the first time in a long time, I ask myself now, what made Lili become a spy?

First of all as amazing as Julie Andrews is in the role, she doesn't quite convince me that she is a ruthless spy who is tired of 'diplomats, old generals' etc. Something tells me she is still new to the game; reason why the General is so reluctant to hire her. 

Than I ask: what is her past and relationship to Von Rugeur? Obviously (especially with the deleted 'Inn Sequence' as support) Lili is a virgin, so there is no way she was lovers with him at any time nor has she had to use 'more persuasive measures' to get information for the German army. 

And it never goes into WHY she is a spy, there ought to be a motive aside from maybe the link being with who Kurt was in her life; for my theory, I think he may have worked with her father in some kind of position and after his death, she thought of him as an influence in her life because she seems an impressionable woman to me.
