SAT Brain Boosters: the Infamous Super Slutty Brownies
Saturday, Lily and Noel took the SAT in preparation for applying to colleges. Katherine, their mother, noted the test is 6 hours long and they would need a snack. I raised my hand and volunteered.
So I called Lily and told her to place her order. Without taking a breath, she shrieked into the phone:
Slutty Brownies.
Now I never in my life heard of such a thing, but she assured me I could find a recipe on the internet.
If you know me at all, you know that I am famous for cooking everything from scratch. When these children were four years old, I wrote a cake bookto make it easier for their mom to make birthday cakes. That book, Cakes From Scratch in Half The Time, says it all.
But Slutty brownies? Never heard of ’em. So sure enough, I found dozens of recipes with different iterations. They all seemed to rest on box cake mixes, Oreo cookies and canned frostings. Well, I said to myself, if the sugar doesn’t kill them, these might be just the ticket for a long test.
So I came home from the store with a Red Velvet Cake mix, a Scottish Shortbread mix for the crust, a package of Oreos, a package of M&M’s, and a big package of semisweet chocolate chips.
I know, it sounds disgusting, but work with me here.
I got out two big 9 x 13 baking pans, coated with parchment paper, spritzed them with Pam, heated the oven to 325 F, pulled out the big mixer and a rubber spatula and went to work.
Follow the directions on the cookie mix, then divide the cookie dough between the two pans and press down. This makes the crust.
Then lay out one layer of Oreo’s.
Finally mix the chocolate cake mix following box directions and divide between the two pans. Sprinkle M&M’s generously on the top, then pop them into
the oven. Take care not to overcook. Check with a toothpick beginning at 20 minutes.
Once they’re out of the oven, sprinkle evenly with chocolate chips. As the chips begin to melt, smooth out to coat the top. Once it cools, cut these lovelies into squares.
of course I could not leave well enough alone. I had some Raw Cacao nibs around here I had acquired for another project. I sprinkled the melted chocolate with the nibs.
I assured the 17 year olds that adding this ancient Mayan superfood, raw cacao nibs made this into a product guaranteed to blow their heads off until their brains were whistling Dixie. They both said, “Cool”. And so we renamed our version.
Super Slutty Red Velvet Brownies with Mayan Superfood Cacao Nibs
the next time you need to drive through the night, or prepare for a test, of just indulge yourself in a ratched way – as the teens say. Give this recipe a try.
makes 2 pans full for 24 servings
1 Red Velvet Cake Mix
3 large eggs
1/3 cup extra virgin olive oil
1 Krusteeaz Scottish Shortbread Mix
1/4 pound unsalted butter, softened
1 box Oreo cookies
1 package M&M’s
1 package semisweet chocolate chips
3 tablespoon Cacao chocolate nibs
Heat oven to 325 F. Mix both mixes. Cake and cookies in separate bowl. Pour half the cookie dough into each pan and press down to make a crust.
Then, lay out a single layer of Oreo cookies.
Top with a layer of cake batter on each pan. Sprinkle generously with M&M’s. Bake until the batter is cooked, a toothpick comes out clean. About 20-30 minutes.
Remove the super slutties from the oven. Pour half the chocolate chips on each baked batch and smooth with an offset spatula. Sprinkle with Cacao chocolate Nibs.
