Ingredients: 2 slices whole wheat bread. 1/4 cup mashed black beans. 2 tablespoons diced tomatoes. 2 tablespoons diced onions. 1/4 avocado, sliced. 1 tablespoon chopped cilantro. 1/2 lime, juiced. Salt and pepper to taste.
Instructions: Cover one slice of bread with mashed black beans. Place tomato and onion dices on top. Add slices of avocado on top. Add chopped cilantro on top. Put lime juice on top of the avocado. Add pepper and salt. To make a sandwich, put the second slice of bread on top. Cut the sandwich in half across the middle and serve.
