It's nice to cool off with these Lime Cream Popsicles, which are a tasty mix of sour lime and smooth coconut milk. This dessert is great for hot summer days or any time you want something cool and tropical.
Ingredients: 1 cup coconut milk. 1/4 cup fresh lime juice. Zest of 1 lime. 1/4 cup honey or maple syrup. 1/2 teaspoon vanilla extract.
Instructions: In a mixing bowl, whisk together coconut milk, lime juice, lime zest, honey or maple syrup, and vanilla extract until well combined. Pour the mixture into popsicle molds, leaving a little space at the top for expansion. Insert popsicle sticks into each mold. Freeze for at least 4 hours or until completely set. To unmold, briefly run warm water over the outside of the molds to loosen the popsicles.
