Linzer Dough
This dough acts more like cookie dough than regular pie dough, but it makes delicious tortes. When working with it make sure it's been allowed to set for a while in the refrigerator or freezer, once this dough warms up it becomes way to soft to work with.
Yield 4 lbs
Ingredients
Butter 16.65 oz Sugar 12 oz Eggs 2 ea.
Vanilla 1 tsp.
Cake Flour 20 oz Cinnamon .16 oz Baking Powder .33 oz
Hazelnut Flour 8 oz Cake Crumbs 2.6 oz
Method of Prep
Cream the butter and sugar together Add one egg at a time, waiting until combined before adding next egg Add the vanilla Sift together the cake flour, cinnamon and baking powder Add to creamed butter/sugar in stages Combine the hazelnut flour and cake crumbs, add to mixture
Divide dough into 4 equal portions, about 1 lb each Wrap each piece in plastic and flatten into a circle ½ inch thick Refrigerate
