Good pastry chefs are aliens to me, as I approach my cutting board and stove always in the most casual way, without weighing or measuring ingredients. Because of it, it is fair to say that while living in the US for the past two decades, some of the Italian foods I missed the most, were the cakes from the local shop in my hometown Fiesole… Millefoglie, my birthday cake of choice, is the dessert I have longing for the most, in all these years. Simple, fluffy, elegant and satisfying, this layer cake built with puff pastry and chantilly cream is now again a staple in my Tuscan diet. Here today, I celebrate my return home, by spinning this favorite recipe of mine into a single serving, easy to make dessert that delivers white whiskers of happiness. I am using Loacker quadratini for a crunchy bite, making a semi-sweet chantilly cream to caress my palate, and garnishing with fresh currants as a simple trick to enhance the flavor of the cookie filling. Love, Gabriele Prep Time 15 min Refrigeration 60 min Makes 4 ramekins (125ml) Ingredients: - 250 ml heavy cream - 1 tbsp powdered sugar - 1/2 vanilla bean - 30 gr small dark chocolate chips - 30 gr fresh currants - 24 Loacker Quadratini How To: - Refrigerate for at least 30 minutes the bowl you will use to whip the cream in. - Using a pairing knife, split all quadratini cookies in half and set aside, then cut the vanilla bean lengthwise and scrape its seeds by gently running the knife blade perpendicular to the pod. - Mix together cream, sugar and vanilla bean into the cold bowl, and using an electric mixer whip until fluffy but firm. Make sure not to over work the cream or it will turn buttery. - Prepare a first layer of quadratini at the bottom of your serving vessel, then gently spoon on top a dollop of whipped cream. - Gently drop on top of it a pinch of chocolate chips, then create a new layer of cookies. - Create two more layers, then spread flat the top of the dessert using a spatula. - Refrigerate for about 60 minutes. - When ready to serve, garnish with a few currants and a couple of cookie slices. #loackerusa #puregoodness (at Fiesole, Italy) https://www.instagram.com/p/CWVxQUdsn55/?utm_medium=tumblr
