Ingredients: 2 ripe avocados, peeled and pitted. 1 jalapeno pepper, seeds removed and finely chopped. 2 tablespoons red onion, finely chopped. 2 cloves garlic, minced. Juice of 1 lime. Salt and pepper to taste. 8 slices of toasted bread. 8 oz cooked lobster meat, diced. 1 tablespoon fresh cilantro, chopped. 1 teaspoon olive oil. Lime wedges for garnish.
Instructions: In a bowl, mash the ripe avocados until smooth. Add the finely chopped jalapeno pepper, red onion, minced garlic, and lime juice to the mashed avocados. Mix well. Season the guacamole with salt and pepper to taste. Adjust the spice level by adding more jalapeno if desired. Spread a generous amount of the guacamole mixture onto each slice of toasted bread.
