I did! I was in one of those jillions of three-flats, right at the top of Center Street near the roundabout.

Re: the underutilized kitchen floor - I worked on Top Chef for several years and they were CONSTANTLY cooking things down there. Always seemed mildly unsanitary but it does make sense from a stability perspective!
I mean, it does feel unsanitary but it’s not like any actual food prep is happening on the floor itself. I just don’t like bending over, which is why I don’t keep more stuff on the floor, but especially with restaurant-standard floor cleanliness it’s not really a huge deal.

Oooh, that much fat in scalded milk would make nice soft buns (And now I'm craving pulled pork and baps)
Yeah, it did come out really nicely! I actually drained most of the fat off of it, but some definitely did get in there.

Sam you might like aloo parantha, which involves potatoes steam cooked in a pressure cooker, mashed, and put into a flatbread and cooked
I like the sound of this! I’m a big fan of flatbreads in general and it feels like putting potatoes in them would just make them super soft and amazing. I’ll have to see about getting my hands on some and/or making some.
