*I’d like to start by stating that I stole this recipe from Disney World the Boma (Tastes of Africa), however I really did all the conversions, so...

African Inspired Spiced Pork Butt

Ingredients:

1 cup Kosher Salt

6lbs Pork Butt (shoulder)  ** Fat is a good thing on this! (bone in is optional)

3/4 cup Granulated Sugar

2 Tablespoons Ground Mace

1 Tablespoons Ground Cardamom  (This can be a little pricy)

2 Tablespoons cayenne pepper

2 Tablespoons Chili Powder

2 Tablespoons Dry Mustard Powder

Directions:

Step 1: Cut in half through the fat cap. (This means that ever chunk of meat will have a nice quarter inch-ish layer of fat on one side.  this is a good thing). 

step 2: Brine the Pork overnight.  Using approximately One cup of Kosher Salt per Gallon of Water.  You will need enough water to cover the butts.

Step 3: combine Salt, sugar, mace, cardamom, cayenne, chili powder, and mustard powder in a ziplock bag or on a deep plate, and coat the exterior of the pork with mixture.

***Your mixture should look something like this:

Step 4: on a pan, place the pork on a wire rack.  Cover with foil.  Cook at 350 degrees F for 4 hours.

Step 5: Chop into 1 inch pieces and serve.  For left overs: heat in a skillet with a small amount of oil.

****Point of interest:  If you mix/coat the spice mixture by hand, take off all jewelry prior to mixing.  Also please be mindful to wash your hands THUROUGHLY when you are finished as the mixture is a little spicy and could cause discomfort to your eyes or other sensitive areas.  Fresh cuts might also be aggravated by exposure
