A tasty and healthy way to start the day is with these Healthy Pizza Egg Muffins. They satisfy your pizza cravings without making you feel bad because they are high in protein and low in calories. You can make a healthy and tasty breakfast by adding your favorite pizza toppings to them.
Ingredients: 6 large eggs. 1/2 cup diced bell peppers. 1/2 cup diced tomatoes. 1/4 cup diced onions. 1/4 cup sliced black olives. 1/4 cup diced turkey pepperoni optional. 1/2 cup shredded mozzarella cheese. 1/2 teaspoon dried oregano. 1/2 teaspoon garlic powder. Salt and pepper to taste. Cooking spray.
Instructions: Start by heating the oven to 350F 175C. Whisk the eggs in a bowl until they are well mixed. Chopped bell pepper, tomatoes, onions, black olives, and turkey pepperoni if using should be added to the eggs that have been beaten. Combine well. You can add salt, pepper, dried oregano, mozzarella cheese shreds, and garlic powder. Spray cooking spray on a muffin tin to keep things from sticking. Fill up every muffin tin cup about two thirds of the way to the top with the egg mixture. After the oven is hot, bake the egg muffins for 20 to 25 minutes, or until the tops are set and a little golden. Take them out of the oven and let them cool down for a few minutes.
