Ingredients: 1 cup almond flour. 1/4 cup powdered erythritol. 1/4 cup unsweetened almond butter. 1/4 cup melted coconut oil. 1/2 teaspoon vanilla extract. 1/2 cup sugar-free dark chocolate chips. 1 tablespoon coconut oil.
Instructions: In a mixing bowl, combine almond flour and powdered erythritol. Add almond butter, melted coconut oil, and vanilla extract. Mix until well combined. Roll the dough into small balls and place them on a baking sheet lined with parchment paper. Place the baking sheet in the freezer for 30 minutes to firm up the balls. In a microwave-safe bowl, melt sugar-free dark chocolate chips with coconut oil, stirring every 30 seconds until smooth. Using a toothpick, dip each almond ball into the melted chocolate, leaving a small circle at the top uncovered to resemble a buckeye nut. Return the coated balls to the baking sheet and place them back in the freezer for another 30 minutes to set. Store in the refrigerator until ready to serve.
