I spent my morning turning these colourful veggies into a lentil and veggie stew which will be my dinner or lunch for the next few days. Lentils have been my go to food prep ingredient lately. Do you guys food prep? I couldn’t survive with out it! • I will have to make lunches for work tomorrow and I am still undecided what to make. I have some beetroot laying around in the fridge so maybe some sort of quinoa and beetroot salad. I have been super busying getting stuff done today so I can enjoy some sunshine tomorrow when it warms up again.
