Ingredients: 2 cups all-purpose flour. 1 3/4 cups granulated sugar. 3/4 cup unsweetened cocoa powder. 1 1/2 tsp baking powder. 1 1/2 tsp baking soda. 1 tsp salt. 2 large eggs. 1 cup buttermilk. 1/2 cup vegetable oil. 2 tsp pure vanilla extract. 1 cup boiling water. 1/2 cup creamy peanut butter. 1/4 cup unsalted butter, softened. 2 cups powdered sugar. 1/4 cup milk. 1 tsp vanilla extract.
Instructions: Preheat your oven to 350F 175C and grease two 9-inch round cake pans. In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined. Pour in the boiling water and stir until the batter is smooth. The batter will be thin; this is okay. Divide the batter equally between the prepared cake pans and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely. While the cakes are cooling, make the peanut butter frosting. In a medium bowl, beat together peanut butter and softened butter until creamy. Gradually add powdered sugar, milk, and vanilla extract, continuing to beat until the frosting is smooth and fluffy. Once the cakes are completely cool, spread a layer of peanut butter frosting on top of one cake layer. Place the second cake layer on top and frost the top and sides of the entire cake with the remaining peanut butter frosting. Decorate the cake as desired and serve.
