If I remember right, according to the DVD commentary, Hatter's coat is a symbol for Alice's trust in him. When he returns from sending a message to Caterpillar she has his coat on again, not because she's cold but because she is starting to trust him
That's interesting! It does make sense.
But its just odd timing that looks like a continuity error - she's wearing the coat as she's getting ready to leave, and the very next second we see her, its gone. If we had seen her taking off the coat, that symbolism could have been very powerful (despite the argument that its probably friggin' freezing out there that night) but it would have shown her lost trust in him.
