i'm gonna fucking cry???? was still rejoicing in my bread success & so happy there are forms of bread i can still eat since i'm definitely yeast intolerant, & i was thinking like "thank god for baking powder" & then like well i don't believe in that kind of god, let's find out who we have to thank

& it turns out Alfred Bird the inventor of baking powder & egg-free custard developed them because his wife was allergic to eggs & yeast!?! 🥺🥺😭 (which like she definitely might've had histaminosis / mcas)

that's rly sweet & it's still blessing my allergic life today <3 yay yeastless leavening

spent a whopping 7 hours cooking 27 hash browns (counting peeling the potatoes etc)

eating 2 rn & freezing 25 (please please let this not upset my stomach lol. used ingredients i haven't reacted to before but the guts work in mysterious ways)

slightly oversalted but they fuuuck 🎉🎉 i'm exhausted but literally perking up just from eating one, was having a hard time earlier today about all the shit i can't eat but it makes me so happy to (🤞) still have good foods available

leek tart was a fuckton of work but oh my goddd it tastes phenomenal, i would eat half of it rn if leeks weren't recommended smaller quantities on the SIGHI list

definitely gonna start incorporating savory pastry into my meal rotations

flatbread: 3-ingredient paleo naan (almond flour isn't low histamine so i used my go-to Great Value gluten free rice flour blend; i added onion powder + parsley)

sauce: low histamine creamy red pepper sauce (haven't made stock yet so i used coconut milk instead; just added some macadamia nuts to the food processor rather than make the cream; added oregano + thyme)

chicken pre-cooked in olive oil with a splash of vinegar, seasoned with salt, onion powder, rosemary, oregano, & thyme

bulk baking dayyy 🧁🧑‍🍳⏲️ maple blondies out the oven & in the freezer, 1st round of muffins (cherry coconut) in the oven, batter for 2nd round (blueberry) ready except for the berries, after those are in the oven i'm gonna make pita (or some sort of bread we'll see what happens) & granola, possibly also chia cookies depending on energy (i'm already tired but yk)

was flaring for the past 2 days & thus didn't cook, so today was another 4 hours in the kitchen lol. but i made low-histamine pasta sauce (bell pepper based) & pesto (with pumpkin seeds)! 7 total servings of sauce in the garage freezer & i ate pesto gnocchi with grilled chicken (frozen from sunday) for supper. was a lot of goddamn work but it did fuck hard

cooked potatoes today so now i don't have any remaining food prep until we next get groceries. wanna make cookies hopefully tonight bc i'm almost out of granola so want some snacks onhand

made spaghetti noodles + heated sauce & chicken, the sauce came out of the 1 cup ice cube tray so smoothly & reheated great, very yummy i'm super happy with how it turned out
