Ingredients: 1 1/2 cups shredded coconut. 1/2 cup almond flour. 1/2 cup granulated sugar. 3 large egg whites. 1/2 teaspoon vanilla extract. A pinch of salt.
Instructions: Preheat your oven to 325F 163C. In a mixing bowl, combine the shredded coconut, almond flour, and granulated sugar. In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gently fold the beaten egg whites and vanilla extract into the dry mixture until well combined. Transfer the batter into a greased 8-inch 20 cm cake pan. Bake for approximately 25-30 minutes or until the top is golden brown and the cake is set. Let the cake cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
