Mad beer, France
MAD Beer Sur, 750 ml., 5% ABV. Very tart and dry; low carbonation. MAD is a collaboration brand between a chef and a brewer—Jakob Mielcke Hansen of the restaurant Mielcke & Hurtigkarl and Mikkel Borg Bjergsø of Mikkeller. Denmark, man. I stumbled upon the bottle a couple months ago and randomly picked it up. The internet did the rest—besides the drinking.
MAD Beer & Food, Copenhagen
In recapping all my recent Danish food fun, I've tended to skip around a bit, but I'm now doing my best to get back on chronological track. My second day in the city started at the Copenhagen Beer Celebration, where I had an Italian beer & fennel tarallo while waiting in line outside, and an excellent hot dog for breakfast. Lunch came courtesy of MAD Beer, which is a new brewing venture teaming up the talents of Mikkel Borg Bjergsø of Mikkeller and Chef Jakob Mielcke of Copenhagen restaurant Mielcke & Hurtigkarl. They've joined forces to use interesting ingredients to try and brew the best possible beers to pair with food. Even the name of the company, "MAD Beer", means "Food Beer" in Danish. To this extent, they offered snacks to go along with all their beer offerings at the CBC. Here's a look...
