Indulge in the rich and creamy goodness of malted milk chocolate gelato. This decadent frozen treat combines the flavors of malted milk powder and semisweet chocolate for a delightful dessert experience.
Ingredients: 2 cups whole milk. 1 cup heavy cream. 3/4 cup granulated sugar. 1/4 cup malted milk powder. 1/4 teaspoon salt. 6 ounces semisweet chocolate, chopped. 4 large egg yolks. 1 teaspoon vanilla extract.
Instructions: Salt, sugar, heavy cream, malted milk powder, and whole milk should all be mixed together in a saucepan over medium-low heat. Sometimes stir the mixture until it starts to steam, but doesn't boil, and the sugar and malted milk powder are completely mixed in. Just take it off the heat and add the chopped chocolate. Mix it in until it melts and is smooth. Whisk the egg yolks in a different bowl until they are pale and just a little thicker. Pour the chocolate mixture into the egg yolks slowly while whisking the eggs all the time to temper them. Put the mixture back in the saucepan. Cook over medium heat, stirring all the time, for about 5 to 7 minutes, or until it gets a little thicker and coats the back of a spoon. Now take it off the heat and mix in the vanilla extract. Through a fine-mesh sieve into a clean bowl to get rid of any lumps. Cover and put in the fridge until it's completely cold, preferably overnight. After the mixture has been chilled, use an ice cream maker according to the directions that came with it. Put the gelato in a container, cover it, and freeze it for at least 4 hours or overnight until it is firm.
