These homemade mango marshmallows are a delightful treat with a fruity twist. Made from scratch using real mango puree, they are soft, fluffy, and bursting with tropical flavor.
Ingredients: 3/4 cup mango puree from ripe mangoes. 2 tablespoons gelatin. 1/2 cup cold water. 1 1/2 cups granulated sugar. 1/4 cup corn syrup. 1/4 cup water. 1/4 teaspoon salt. 1 teaspoon vanilla extract. Powdered sugar for dusting. Cornstarch for dusting.
Instructions: In a bowl, sprinkle gelatin over 1/2 cup of cold water. Allow it to bloom for about 10 minutes. In a saucepan, combine mango puree, granulated sugar, corn syrup, and 1/4 cup of water. Stir over medium heat until the sugar has completely dissolved. Attach a candy thermometer to the saucepan and heat the mixture until it reaches 240F 115C. This is the soft-ball stage. While the sugar mixture is heating, microwave the gelatin for about 20 seconds until it becomes liquid. Once the sugar mixture reaches the correct temperature, remove it from the heat immediately. Pour the liquid gelatin into the sugar mixture and whisk to combine. Add salt and vanilla extract, and continue to whisk until the mixture becomes thick and glossy. Pour the mango marshmallow mixture into a greased and parchment paper-lined 9x9 inch 23x23 cm pan. Let it sit at room temperature for at least 4 hours or until set and firm. Combine equal parts powdered sugar and cornstarch in a bowl. Dust a clean surface with this mixture. Remove the mango marshmallow block from the pan and place it on the dusted surface. Cut the marshmallows into squares or desired shapes, coating each piece with the powdered sugar and cornstarch mixture to prevent sticking. Your mango marshmallows are now ready to be enjoyed! Store them in an airtight container with a dusting of the sugar-cornstarch mixture between the layers to prevent sticking.
