Lentil tostadas are so easy-peasy and delish! Lentils cook in about 15 minutes, and are especially nutritious if you sprout them for a day or so before cooking, but not absolutely necessary. I like mine a little spicy, but season to taste. I toasted the corn tortillas in an air fryer, but they could be toasted in the oven or toaster. Then, pile on all the good stuff, but leave off the unhealthy, fattening animal products and oils.
