Mapadubu (Mapo Tofu)

With some leftover ingredients (mainly ground beef) from our epic budaejjigae night, we used the remainder to make a (somewhat) healthy dinner -- mapadubu!

Ground beef being surrounded by all the colorful veggie goodness. It has become a rule that we always add serranos, when possible.

Oh man, it's so pretty! I could just eat it the way it is.

Add in the 'doobz' and slurry to form a gravy.

Top it off with scallions and voila.

Served with banchan from the budaejjigae entry (odeng-bokkeum and kongnamul muchim). Sooooooo yummy. Oh hey, you can see me from my spoon!

We actually ended up killing the entire bowl and the remainder in the pan.

Soy protein, gooooood.
