Ingredients: 1 1/2 cups whole wheat flour. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1 tsp cinnamon. 1/2 tsp nutmeg. 1/2 cup Greek yogurt. 1/2 cup maple syrup. 1/4 cup olive oil. 2 eggs. 1 tsp vanilla extract. 2 cups diced apples. 1/2 cup chopped walnuts optional.
Instructions: Preheat your oven to 350F 175C. Grease and flour a 9-inch 23 cm round cake pan. In a mixing bowl, whisk together the whole wheat flour, baking powder, baking soda, salt, cinnamon, and nutmeg. In another bowl, combine the Greek yogurt, maple syrup, olive oil, eggs, and vanilla extract. Mix until well combined. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. Fold in the diced apples and chopped walnuts if using. Pour the batter into the prepared cake pan and spread it evenly. Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.
