Make this tasty vegan maple pumpkin nice cream with bananas, pumpkin puree, maple syrup, and warm spices. It's thick and creamy. This dessert is simple to make and tastes great in the fall or whenever you want something sweet and filling.
Ingredients: 3 ripe bananas, sliced and frozen. 1 cup canned pumpkin puree. 1/4 cup maple syrup. 1 teaspoon vanilla extract. 1 teaspoon pumpkin pie spice.
Instructions: In a food processor or high-speed blender, combine frozen banana slices, pumpkin puree, maple syrup, vanilla extract, and pumpkin pie spice. Blend until smooth and creamy, scraping down the sides as needed to ensure all ingredients are well incorporated. Transfer the mixture into a freezer-safe container and freeze for at least 4 hours or until firm. Once firm, scoop the nice cream into bowls and serve immediately, garnished with a sprinkle of extra pumpkin pie spice if desired.

A delightful fusion of fall flavors, this Vegan Maple-Pumpkin Quesadilla combines creamy pumpkin puree, sweet maple syrup, warm spices, vegan cheese, and crunchy pecans sandwiched between two crispy tortillas.
Ingredients: 2 large flour tortillas. 1 cup canned pumpkin puree. 2 tablespoons maple syrup. 1 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 1/4 teaspoon ground ginger. 1 cup vegan cheese shreds. 1/4 cup chopped pecans.
Instructions: Put the pumpkin puree, maple syrup, cinnamon, nutmeg, and ginger in a bowl and mix them together until they are well mixed. Leave a small edge around the edges of one tortilla and spread half of the pumpkin mixture on it. Add half of the vegan cheese shreds and the chopped pecans on top of the pumpkin mix. To make the second tortilla, put it on top and quickly press it down. Place the skillet over medium-low heat and carefully move the quesadilla onto it. Turn the food over three to four times, or until it's golden brown and crispy. Take it off the heat and let it cool a bit before cutting it into wedges. Enjoy while still warm!
