I'm such a sucker for collecting and reading screenplays. I love seeing how they brought those scenes from the page on the big screen. What kind of changes have been made and maybe some more in depth detail on the characters that didn't make it into the final movie/TV show. Also interesting to see how often name changes happen. Either cause they originally had someone else in mind for the role, or maybe for even for totally different reasons. Pedro interestingly actually had a couple of name changes from screenplay to the final movie/show.
So far I've found 10 for Pedro's projects, they're all from various production stages, from first drafts to shooting script but I am wondering if there might be more out there I haven't discovered yet.

Pedro plays the character of Javier Peña which is based off of a real person. His full name is mentioned in both the screenplay and the TV show. In the first episode he only has one little scene which is identical to this screenplay, with minor little shifts in the dialogue.
Prospect (2018)

The screenplay has a final scene that the directors mentioned in an interview that was eventually scraped for the movie. Not sure if they even shot that scene. In the movie, screenplay and end credits Pedro's character is called Ezra. No last name is known for this character.
If Beale Street Could Talk (2018)

Pedro's only got one scene in this movie and it plays out like it's written in the screenplay. Some of the dialogue has been slightly changed though. In the screenplay Mrs. Rivers adresses Pedro's character Pietro Alvarez with his full name and it is also listed in the movie credits but he is not mentioned by name in the movie.
Triple Frontier (2019)

This screenplay turns out to be quite different to what happens in the final movie. A lot of changes have been made about the plot and the characters. In this version of the screenplay Pedro's character is only referred to as Catfish. In the movie he's mostly called Fish, but once adressed with Frankie and once called Catfish. The end credits list him as Francisco "Catfish" Morales. His last name is never mentioned in the movie itself though.
The Unbearable Weight of Massive Talent (2022)

The screenplay is similar to what the movie turned out to be with some additional scenes and some scenes being different than they are in the final movie. We see more of Javi and Nick discussing and/or arguing about the script they are writing together and more scenes between Gariella and Javi. In the screenplay it's a little bit more ambiguous for 2/3 of the movie if Javi is actually a good or bad guy. In the screenplay, movie and end credits Pedro's character is called Javi Gutierrez.
The Last of Us - 1x03 Long Long Time (2023)

This series is an adaptation of the game called The Last of Us by Neil Druckmann. Pedro plays the character of Joel Miller. In the screenplay for the third episode Joel's last name is not mentioned nor is it said in this episode. But he get's referred to as Joel Miller in the first episode of the series and very likely also mentioned in the screenplay there. The episode plays out exactly like it's written down in this screenplay.
Drive-Away Dolls (2024)

In this version of the screenplay Pedro's character is called Jimmy Yun but is referred to in the movie as Alejandro Santos y Obrador and listed in the end credits as Penis Collector. The title of the movie in this screenplay is called Drive Away Dykes. The one scene Pedro is in plays out exactly like it was written in this screenplay, with some minor changes of the dialogue.

In this version of the screenplay Pedro's character is called Lucien Flores, but is referred to in the movie as Lucien de Leon. I can't confirm his name in the end credits as I have not seen the movie yet. I can't wait to compare the screenplay to the actual movie.
The Wild Robot (2024)

The plot of the screenplay is exactly like the movie. This very likely is the final shooting draft. Probably a polished version that was released for the Oscar nominations coming up. Pedro's character in the book, screenplay, movie and end credits is called and referred to as Fink. Fink has a much smaller role in the book.
Gladiator II (2024)

This screenplay is marked as shooting script so it is the version they used for the film. However a couple of scenes were cut from the finished movie. They've been filmed and later cut as they've been released as deleted scenes since. In the screenplay and movie Pedro's character is called General Justus Acacius. In the end credits he is listed as General Acacius.
