Ingredients: 1 cup creamy peanut butter. 1 cup granulated sugar. 1 large egg. 1 teaspoon vanilla extract. 1/2 cup marshmallow creme. 1/2 cup unsalted butter, softened. 1/2 cup packed light brown sugar. 1 3/4 cups all-purpose flour. 1/2 teaspoon baking soda. 1/4 teaspoon salt.
Instructions: Preheat the oven to 350F 175C and line baking sheets with parchment paper. In a large bowl, cream together the peanut butter, butter, granulated sugar, and brown sugar until smooth and fluffy. Beat in the egg and vanilla extract until well combined. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Roll the cookie dough into 1-inch balls and place them 2 inches apart on the prepared baking sheets. Using a fork, gently press down on each cookie to create a crisscross pattern. Bake for 10-12 minutes or until the cookies are lightly golden around the edges. Remove from the oven and allow the cookies to cool on the baking sheets for 5 minutes. Transfer the cookies to a wire rack to cool completely. Once the cookies are cooled, spread marshmallow creme on the flat side of half the cookies.
