Crispy Cheesy Mashed Potato Fries These Crispy Cheesy Mashed Potato Fries are a delightful twist on traditional fries, combining the creamy texture of mashed potatoes with a crispy exterior. Perfect as a snack or side dish! Ingredients 3 medium russet potatoes, washed, peeled, cut, and boiled until fork tender 1 teaspoon salt ½ teaspoon black pepper ½ teaspoon garlic powder ½ cup shredded cheddar cheese ¼ cup cornstarch Oil for frying Instructions Begin by peeling the russet potatoes and slicing them into uniform pieces. Boil the potatoes in salted water until they are fork-tender, which should take about 15 minutes. Once cooked, drain the potatoes and transfer them to a large mixing bowl. Mash the potatoes until they are smooth using a potato masher. Add the salt, black pepper, garlic powder, shredded cheddar cheese, and cornstarch to the mashed potatoes, mixing thoroughly with a wooden spoon until well combined. Spread a large sheet of waxed paper on a clean work surface and place the potato mixture on top. Using an offset spatula, spread the mixture into a rectangle measuring 8 x 10 inches and about ¾ to 1 inch thick. Transfer the potato rectangle to the freezer and chill for 30 minutes. While the potatoes chill, heat a Dutch oven with 1 inch of vegetable oil over medium heat. Once the potatoes are firm, use a pizza cutter or chef's knife to slice the rectangle into even French fries that are ¾ to 1 inch wide. When the oil reaches 325 degrees Fahrenheit, carefully add 3-5 fries to the Dutch oven. Fry the fries, rotating them with tongs as needed, until they are golden brown, approximately 5-7 minutes per batch. Transfer the cooked fries to a paper towel-lined plate to drain excess oil and continue cooking the remaining fries. Serve the fries hot, with your choice of ketchup or aioli for dipping.
