Ingredients: 3 cups of red or white wine your choice. 1/4 cup of lemon juice. 1 package of powdered pectin. 4 cups of granulated sugar. 1/2 teaspoon of butter optional, to reduce foaming. Cute mason jars for packaging.
Instructions: Pour the wine and lemon juice into a large saucepan and heat over medium-high heat. Once it begins to simmer, sprinkle the powdered pectin evenly over the liquid while whisking continuously to avoid lumps. Bring the mixture to a rolling boil, stirring constantly. Add the granulated sugar gradually, stirring until it dissolves completely. If you wish to reduce foaming, add the optional butter at this stage. Continue to boil the mixture for 1-2 minutes until it thickens and passes the gel test. To check, place a small amount of the mixture on a chilled plate. If it wrinkles and sets when you push it with your finger, it's ready. Remove the saucepan from heat and skim off any foam if necessary. Carefully pour the hot wine jelly into clean and cute mason jars, leaving about 1/4 inch of headspace. Seal the jars with lids and allow them to cool to room temperature.
