Super healthy, super yummy PIZZA. Haha... Pizza cravings just neeeeeed to be fulfilled! But how do you indulge in this yummy snack without sacrificing on your healthy diet? Well, today afternoon I had a crackling idea. I made some crispy corn flour ( makkai ka aata) and water chestnut flour ( singade ka atta) ka roti and toasted it on flow flame. Then I applied mint and garlic paste ( chutney) over this base, added some onion, capsicum, Malabar spinach ( mayalo) goat cheese and grated paneer as the topping. Baked this baby in the oven until the veggies are cooked and the cheese melted . This made me a crispy thin crust pizza without the use of refined flour. PS: use a healthy amount of cheese dont load it. I bought the MAYALO ( MALABAR SPINACH) from the Agro vegetable farm in my area ( #eatlocal). This Indian brred of spinach is very low in calories nonetheless, it holds an incredibly good amount of vitamin A & C ( more than the english spinach) , minerals and anti oxidants. It facilitates smooth digestion reduction in cholesterol absorption, and helps prevent bowl problems.
