These vegan meatballs made with lentils and mushrooms are hearty and tasty, and they're perfect for when you're craving comfort food. They are a healthy addition to any meal because they are full of protein and fiber.
Ingredients: 1 cup cooked lentils. 1 cup chopped mushrooms any variety. 1/2 cup breadcrumbs. 1/4 cup finely chopped onion. 2 cloves garlic, minced. 2 tablespoons ground flaxseed mixed with 6 tablespoons water as binder. 1 tablespoon soy sauce. 1 teaspoon dried thyme. 1 teaspoon paprika. Salt and pepper to taste.
Instructions: Preheat oven to 375F 190C. In a food processor, pulse cooked lentils until slightly mashed. Add chopped mushrooms, breadcrumbs, onion, garlic, flaxseed mixture, soy sauce, thyme, paprika, salt, and pepper to the lentils. Pulse until well combined but still slightly chunky. Form mixture into small balls and place them on a lined baking sheet. Bake in the preheated oven for 20-25 minutes, or until meatballs are golden brown and firm. Serve hot with your favorite sauce or as desired.
