These vegan meatball burgers are hearty, healthy, and incredibly delicious. They're made with a combination of quinoa, black beans, oats, walnuts, and spices, then baked to perfection. Serve them on whole grain buns with lettuce, tomato, and vegan mayo for a satisfying meal that will please vegans and non-vegans alike.
Ingredients: 1 cup cooked quinoa. 1 can 15 oz black beans, drained and rinsed. 1/2 cup rolled oats. 1/4 cup chopped walnuts. 1/4 cup chopped fresh parsley. 2 tablespoons tomato paste. 1 tablespoon soy sauce. 1 teaspoon garlic powder. 1 teaspoon onion powder. 1/2 teaspoon smoked paprika. 1/4 teaspoon black pepper. 4 whole grain burger buns. Lettuce, tomato slices, and vegan mayo, for serving.
Instructions: Warm the oven up to 375F 190C and put parchment paper on a baking sheet. Boil the quinoa and put it in a food processor. Add the black beans, oats, walnuts, parsley, tomato paste, soy sauce, garlic powder, onion powder, smoked paprika, and black pepper. The mixture should come together but still have some chunks in it after being pulsed. Take the mixture and roll it into 12 meatballs. Then, put them on the baking sheet that has been prepared. Put the meatballs in the oven and bake for 20 to 25 minutes, or until the outside is firm and a little crispy. Put some lettuce leaves and tomato slices on the bottom half of each bun before putting the burgers together. Spread vegan mayo on the top half of each bun and then add three meatballs to each one. Serve right away.
