Ingredients: 1 cup cooked lentils. 1 cup cooked black beans. 1 onion, diced. 1 bell pepper, diced. 2 cloves garlic, minced. 1 tablespoon chili powder. 1 teaspoon cumin. 1 teaspoon smoked paprika. 1/2 teaspoon oregano. 1/4 teaspoon cayenne pepper. 1 cup tomato sauce. 2 tablespoons tomato paste. 1 tablespoon maple syrup. 1 tablespoon soy sauce. Salt and pepper to taste. Hamburger buns, for serving. Optional toppings: sliced avocado, diced tomatoes, chopped cilantro.
Instructions: In a large skillet, saut the onion and bell pepper until softened, about 5 minutes. Add the garlic, chili powder, cumin, smoked paprika, oregano, and cayenne pepper. Cook for another minute until fragrant. Stir in the cooked lentils, black beans, tomato sauce, tomato paste, maple syrup, and soy sauce. Simmer the mixture for 10-15 minutes until thickened, stirring occasionally. Season with salt and pepper to taste. Serve the sloppy joe mixture on hamburger buns with optional toppings like sliced avocado, diced tomatoes, and chopped cilantro.
