This juicy meatloaf made in a pressure cooker is a quick and easy way to enjoy a classic comfort food. Because the pressure cooker seals in the moisture, the meatloaf is always tender and full of flavor.
Ingredients: 1 lb ground beef. 1/2 cup breadcrumbs. 1/4 cup milk. 1/4 cup diced onion. 1/4 cup diced bell pepper. 1/4 cup grated Parmesan cheese. 1 egg. 2 cloves garlic, minced. 1 teaspoon Worcestershire sauce. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/4 cup ketchup.
Instructions: Put the onion, bell pepper, Parmesan cheese, egg, garlic, Worcestershire sauce, salt, and black pepper in a large bowl. Then add the ground beef and mix it all together. Mix well. Shape the dough into a loaf and put it on a sheet of aluminum foil. Cover the meatloaf with ketchup. Put the foil all the way around the meatloaf to seal it. Put one cup of water in the bottom of the pressure cooker. You should put a trivet inside the pressure cooker and then put the meatloaf wrapped in foil on top of it. Seal the valve and close the lid of the pressure cooker. Put the food through 25 minutes of high pressure. Let the pressure drop naturally for 10 minutes, and then carefully let go of any extra pressure. Open the lid and carefully take the meatloaf out of the pressure cooker while still wrapped in foil. Cut it up and serve it hot, with extra ketchup or your favorite sauce on top if you want.
