Ingredients: 1 cup almond flour. 2 tbsp coconut flour. 1/4 cup powdered erythritol. 1/4 tsp salt. 6 tbsp butter, cold and cubed. 1 large egg. 1 can 15 oz pumpkin puree. 1/2 cup heavy cream. 2 large eggs. 1/2 cup powdered erythritol. 1 tsp pumpkin pie spice. 1 tsp vanilla extract.
Instructions: Preheat oven to 350F 175C. In a food processor, combine almond flour, coconut flour, powdered erythritol, and salt. Pulse until well combined. Add cubed butter and pulse until mixture resembles coarse crumbs. Add 1 egg and pulse until dough comes together. Press dough into the bottom and up the sides of a 9-inch pie dish. Prick the bottom with a fork and bake for 10-12 minutes, until lightly golden. Remove from oven and let cool. In a large bowl, whisk together pumpkin puree, heavy cream, eggs, powdered erythritol, pumpkin pie spice, and vanilla extract until smooth. Pour pumpkin mixture into the cooled pie crust. Bake for 40-45 minutes, until the center is set but slightly jiggly. Let cool completely, then refrigerate for at least 2 hours before serving. Slice and enjoy your delicious keto pumpkin pie!
