We never get the real reason or an explanation for why Perseus buried her, so it's up to people's interpretation. Personally I think that the reason why he did that was due to respect and fear for Stheno and Euryale (few people are talking about Medusa's sisters and how much they probably suffered after losing her), and because at the end of the day Medusa was still a being who deserved a grave just like any other mortal, wheter you preffer Hesiod's Theogony where she was always a monster or Ovid's Metamorphoses where she was punished by Athena. It also implies the fact that Perseus csn respect an enemy, especially one whom he didn't really interact to and had to kill in her sleep because his situation and circumstances didn't give him too many options.
