I made so many egg-yolk-only Passover butter cookies that I had a zillion egg whites left. So? I made Pavlovas (among other things) so I wouldn’t have to waste the whites! I hate food waste!! Bonus: pavlovas (filled meringue shells) are gluten free. Bonus: they’re delicious. Bonus: they’re so pretty! Make them big, make them little.
