Ok I’m gonna be honest, baffled by this. I am so sorry genuinely, I have no idea what this means. Am I a normie and not knowledgeable enough about a topic I thought I was across?!(!?!?!??!?!(
Ingredients:
Olive oil
Diced shallots (I use usually around 4, but you can use more or less to taste)
Diced garlic (I use jarred gaflic because I'm lazy, I put like a couple big spoons in it so this is also to taste)
2 cans coconut milk (shake them well before you start cooking, coconut milk gets Thick when sitting in the cans)
1 can red curry paste (I use Maesri, but Mae Ploy had decent curry paste too. Also, if a whole can is too spicy for you you can put less)
3-4 kaffir lime leaves sliced thin
Handful of Thai basil chopped (if you like more or less basil feel free to change this)
1 1/2ish big spoons Thai fish sauce (I use Viêt Huöng, if you do not/cannot eat fish I do know they make vegetarian options tho I've never tried any of them)
1 cup heavy whipping cream (if you don't/can't eat dairy you can just sub a little more coconut milk)
1 to 1 ratio cold water and flour (I use about 1 1/2 big spoons, whatever you use just make sure the flour and water are equal amounts, this just effects how thick your curry is, if you can't have flour, corn starch works fine too)
3ish sliced chicken breasts (shrimp can also be good but I prefer chicken, if you don't eat meat you could try tofu, I'd probably try fried tofu with it over regular tofu, it absorbs flavor better and has a better texture)
1 kaffir lime
For vegetables i like red bell pepper (3ish) and sliced bamboo shoots (one can) but you can put what you like. My mom likes red bell pepper, bamboo shoots, baby corn and pea pods. I know some people also like carrots, so just use what you like but slice it thin
White rice (I use Jasmine rice, I usually make however much rice fills up roughly 1/3 of my rice cooker, just make however much you think you'll eat, and don't forget rice expands. The way I measure how much water to put in the rice while cooking is i touch the tip of my index finger to the top of the rice and fill water in the pot until it reaches the first line on my index finger)
Directions:
Wash your rice and begin cooking it (if you have a rice cooker use that, otherwise you can cook it with a covered pot on the stove on medium heat for around 30 minutes, BUT if you have to cook it on the stove make sure to stir it from time to time so it doesn't burn to the bottom of your pan. If you add butter to your rice I will send gordon ramsey to your house to berate you)
When cooking the curry you should be stirring pretty much the whole time until the end when you let it simmer. Otherwise it'll burn to the bottom of the pan.
Heat olive oil, garlic and shallots in your pan on high heat until the garlic and shallots have begun to brown, add in chicken, let chicken cook off then remove and set on a plate on the side (if you're using tofu or shrimp do NOT add them yet, this will come later)
Add coconut milk and curry paste (if you are using extra coconut milk instead of heavy whipping cream add it in here too with the rest of the coconut milk), stir well until well combined, add lime leaves, basil and fish sauce then bring to a boil. Add vegetables, chicken (or shrimp/tofu) and heavy whipping cream. Bring to a boil, then reduce the heat and let it simmer for around 15 minutes. Bring back to a boil for a couple minutes then serve over rice, add a little kaffir lime juice to taste (on your individual serving, its best putting a little over your food fresh)
