This Vegan Mexican Fried Rice is a flavorful twist on traditional fried rice, incorporating classic Mexican ingredients like black beans, corn, and bell peppers. It's easy to make, packed with protein and fiber, and bursting with delicious spices.
Ingredients: 2 cups cooked rice. 1 can black beans, drained and rinsed. 1 cup corn kernels. 1 red bell pepper, diced. 1 small onion, diced. 2 cloves garlic, minced. 1 tablespoon olive oil. 1 teaspoon cumin. 1 teaspoon chili powder. 1/2 teaspoon paprika. Salt and pepper to taste. Fresh cilantro for garnish. Lime wedges for serving.
Instructions: Warm up the olive oil in a big pan over medium-low heat. Slice the onion, bell pepper, and garlic and add them. For about 5 minutes, or until softened, saut. Add the corn, black beans, and cooked rice. Add salt, pepper, chili powder, cumin, and paprika to taste. Combine well by mixing. Cook for another 5 to 7 minutes, stirring every now and then, until everything is hot. Add fresh cilantro and lime wedges on top and serve hot.
