Bubble Cake

Have you ever wanted a dessert but didn’t have the time or energy to mix a ton of ingredients? Well this recipe is perfect for the lazy vegan. It’s inexpensive, easy, and can make lots of flavors of delicious cake with just one ingredient. What’s this magic ingredient you ask? It’s soda! Replacing the butter, eggs, and milk with soda can make a nice fluffy cake just the same. I decided to use Fresca for a nice lemony cake and thought it would pair well with a nutty frosting, so here’s how you make my version.

For the Cake:

· ¼ cup flour (works with GF flour too)

· 2 tbsp sugar

· 1 tsp baking powder

· Pinch of salt

· About ¼ cup soda (I used Fresca)

For the Frosting

· 1 tbsp nut butter (I used peanut butter)

· 2 tbsp honey (agave works if you don’t eat honey)

· Cinnamon for garnish

Here’s how you do it…

1. Mix all the dry ingredients in your mug

2. Add your soda and mix (it should be a cake batter consistency)

3. Drink the rest of the soda 😉

4. Microwave for 2 min

5. Mix the frosting and spread over warm cake

6. Sprinkle with cinnamon and be sure to take some photos for Instagram

7. Dig in!

The satin matt finish is easy to clean with a quick wipe, and cooking is super easy with only two main controls. Time and Power!

Nothing fancy just good quality components and a great price. Not too cheap so it breaks down, but not so expensive it hurts your wallet. I really like this microwave. It is just an honest product. There are no outrageous claims or gimmicks. It just works.
