This easy microwave roast chicken recipe allows you to enjoy a flavorful and juicy bird without heating up your oven. Perfect for when you're short on time or don't want to use the oven!
Ingredients: 1 whole chicken about 3-4 pounds. 2 tablespoons olive oil. 1 teaspoon salt. 1 teaspoon black pepper. 1 teaspoon garlic powder. 1 teaspoon paprika. 1 lemon, halved. Fresh herbs such as rosemary or thyme, for garnish optional.
Instructions: Take the giblets out of the chicken and dry them off with paper towels. Put olive oil, salt, pepper, garlic powder, and paprika in a small bowl. Mix them together to make a spice rub. Spread the spice mix out on the chicken so that it is covered all over. Put the chicken on a plate or dish that can go in the microwave with the breast side down. Place the lemon halves inside the chicken and squeeze the juices over it. Make a small hole in the plastic wrap that can go in the microwave and loosely cover the chicken. This will let the steam escape. Turn the chicken over every 8 to 10 minutes while it's cooking on high for 8 to 10 minutes per pound, or until the thickest part of the thigh reaches 165F 75C. Wait 5 to 10 minutes before cutting the chicken into pieces. If you want, add fresh herbs as a garnish and serve.
