Salt to taste. 2 to 3 tablespoons water. Dash of paprika, for serving. Chopped fresh parsley, for serving.
Instructions: In a food processor, combine chickpeas, lemon juice, tahini, minced garlic, olive oil, ground cumin, and a pinch of salt. Process until smooth and creamy, about 1-2 minutes. If the mixture is too thick, add 2-3 tablespoons of water and process again until desired consistency is reached. Taste and adjust the seasoning, adding more salt if needed. Transfer the hummus to a serving dish and drizzle with extra-virgin olive oil. Sprinkle with a dash of paprika and garnish with chopped fresh parsley.
