So Piglins occasionally give you bottles of water when you barter with them, and I've seen people asking 'where do they get the water?' and my thought is that the water in the Nether can be found in the fungal trees of the crimson forests and warped forests. Essentially my idea is they tap the fungus for water, like tapping a maple tree for sap.

Minecraft Worldbuilding - Medicinal uses that aren't potions
There is one obvious healer in Minecraft; a potion of regeneration. A potion of healing works, too. But these aren't always easy to get, as you'd need to go to the nether for the ingredients.
A pufferfish is commonly used for a painkiller replacement in seaside locations. In large doses it makes you feel sick, yes. But if you carefully extract the viscera and dissolve it in water, it has a numbing effect. This has to be done with extreme caution and care. Add just a little more of the poison to your solution, and you might end up poisoning an already sick individual.
Still in seaside or Riverside locations, squid and squid ink are often consumed due to its level of antioxidants. Squid ink pasta is a popular food to give to the sick, same with kelp soup.
Prismarine is hard to get by; you'd have to go to a sea temple for it! But if you have some, it has incredible uses for treating burn wounds, especially second or third degree burns. It is ground up to a fine powder and then mixed with water, it's applied as a cream when needed. Due to its special use and rarity, it's usually only used for those with more wealth.
Some pillagers get sick of killing and robbing the innocent, causing them to quit. Pillager groups typically just let them leave, as they usually get killed on their own and there's no sense in forcing someone who's disloyal to stick around.
Those who don't get mauled by zombies in the first 24 hours tend to do pretty well. Some become nomads, exploring the world and living on their own. (Sometimes nomads encounter each other and start traveling together.) Others become solo thieves who get their loot with stealth and cunning rather than murder.
In rare cases, they might join a village, although finding a village that will let them in is easier said than done. Some will start living near a village, coming into town to buy groceries and doing odd jobs for emeralds. Those who do this will often find work as scouts and/or cartographers, on account of being a lot more willing to leave safety than most villagers are.
Oh, what a cool concept! I can already imagine all the different stories of outcast illagers, each having their own lives disconnected from the big group. All the possibilities!
Minecraft Worldbuilding - Party food Items
As many know, there's plenty of party foods. Cake, pie, some even like to take suspicious stew shots. But there's so many options that people need to try out more!
A powdered snow cone is a great example. It's easy to find and a nice refreshing treat in summer. You can add honey, apple juice, even melon slices for extra flavour! some even add some redstone dust for a kick when they serve it savoury. Kelp soup is another food that's been a staple for culture for centuries! People enjoy it at birthday parties all the time! Seasonings vary, but many add bones to the mix for extra flavour; and nutrients! Lastly, roasted seeds are also a delicacy. Pumpkin, melon, you name it! You can roast them over a campfire or in a smoker.
I headcanon that the nether star is a greater spirit, a compressed massive souls forged from soul sand, made animate by the creation and death of the wither, they have been compressed into a singular Nether star. I imagine the souls inside of it act as a hive mind, and are forever grateful to the player for their freedom, the beacon is their temple, offerings of valuable material strengthen them, through the construction of the pyramid and offerings they are able to lend aid.

Crafting a beacon is a ritual, a build of honour, a build of passion, a temple of gratitude. If someone feels low or upset, they can go to a beacon to gather their thoughts. It has a healing, or speed, or any other effect you apply, of course. But it's peaceful. It's harmonious. It's a place of comfort.
Since you can get wood from both Warped Fungus and Crimson Fungus, would it be possible to make paper from them? Or are they too different from the Overworld Trees to make paper from?
I think it's definitely possible; though it would be just slightly different.
Warped and Crimson fungus (the big tree type) are softer than normal trees, and have viscous liquid running through it. This makes it more difficult to turn into a pulp, as it becomes sticky and gooey. But if you have enough patience, you can keep stirring the pulp until it eventually dries out slightly and has a similar texture to normal wood pulp. From then on you can press it into paper, as you would with any other wood type.
There are differences in the finished product, too; the paper will have a red or blue hue, depending on the wood you used. It has a slight smell to it, too. The blue paper smells slightly sweet while the red smells earthy. Writing on it with ink is the same, but the paper is more durable and harder to rip or tear.
Minecraft Worldbuilding - weapons in villages
We all know villagers typically need help from iron golems. But there's actually a tradition of villagers giving out a wooden sword to their young adult children.
It's an honorary job; weapon smiths spend hours and hours making this wooden sword, engraving it with the initials of the user, the patterns based off their personality, from swirls for the dreamy ones to fire for more feisty villagers, it's all hand engraved. When a teen villager turns 16, they get this weapon.
Most don't actually use it. They have iron golems after all! Why would anyone need to know how to fight? But some enjoy this. They train, they learn to dodge, attack, flee when needed. They may not need to use these skills often, but even the one time they could save another villager from a zombie when an iron golem was busy, is enough to keep them motivated.
Sadly this tradition has nearly died out. Many, mostly weapon smiths, try to keep this alive in case something happens to their iron golem, but many villagers simply don't see the need to practice this skill.
