Spicy Thai Cucumber Salad
I have been cooking with cucumbers a lot lately because it’s hot and humid where I live. Cucumbers happen to be the most hydrating vegetable (filled with gel water) available in my area and they’re easy to turn into a quick snack!
Ingredients
2 cucumbers
2 tablespoons of maple syrup
1/2 tablespoons of red pepper flakes
1/3 cup rice vinegar
1/2 teaspoon of sesame oil
A pinch of salt and black pepper
Directions
Whisk together all the ingredients except the cucumbers
Let the dressing sit while you peel and cut the cucumbers so they’re 1/2 inch wide
Pour the dressing over the cucumbers, stir and then refrigerate. Allow the cucumbers to marinate overnight or you can eat immediately. It tastes better the longer it marinates :)
Cheesy Zucchini Breadsticks
Another yummy low carb snack that you can eat shamelessly. It is known that overindulgence in carbs can cause blood sugar spikes and over production of insulin, which can eventually lead to insulin resistance. To prevent this, its best to watch how many carbs you consume. However, complete restriction of carbs is not the answer! Carbohydrates is broken down into glucose which is necessary for adequate brain, muscle, and heart function. Our brains use glucose for fuel. Without carbs we’ll have problems with cognitive retention, concentration, moodiness and fatigue.
Ingredients
3 cups zucchini about 3 zucchinis
5 oz clam of spinach
3 eggs
1/3 cup flour (organic all-purpose)
1 teaspoon salt
2 cups vegan cheese* or 3 tablespoon nutritional yeast
1 1/2 tablespoon of rosemary
1 1/2 tablespoon oregano
1/2 tablespoon of parsley
1/2 tablespoon of thyme
Salt & pepper
Olive oil
* I used Daiya Cheddar and Mozzarella vegan cheese
Directions
Preheat oven to 450 F degrees
Peel zucchini, then grate or use food processor
Place zucchini in a bowl of water. Let it sit for 10-15 minutes to release moisture
Squeeze ro release liquid, then mix zucchini in a bowl with eggs and flour
Oil baking sheet with olive oil and spread mixture onto pan. Shape into a rectangle
Bake for 25 minutes. Don’t be afraid to brown the top, you want the side to be nice and brown and the middle to be firm, not super mushy
Chop spinach, finely
Reduce oven to 350 F. Sprinkle vegan cheese or nutritional yeast and top with additional seasonings like rosemary and oregano
Bake for another 1-3 minutes or until the cheese melts. Remove from the oven and allow to cool. Cut, then enjoy!
Chipotle Lime Crema-dillas!
I’m so excited to share this recipe because it is so good and easily customizable! You will definitely need a blender or food processor and some time, less than one hour though :)
Ingredients:
8 tortillas
1 lime
1/2 cup raw cashew*
1/4 cup tapioca flour
Olive oil
*Cashew pieces are cheaper, especially if you buy bulk
For the Crema
1 tsp lemon juice
1/4 cup water
1 1/2 tablespoon
1/2 teaspoon garlic powder
Salt & pepper
For the Chipotle Lime
1/2 cup cashews
3/4 cup chipotle lime salsa**
1/2 teaspoon chili powder
Salt & pepper
**You can substitute for what salsa you want, if you want a different flavor
Directions:
You will need soaked cashews. You can soak them overnight or boil a pot of hot water, and soak then soak the cashews for 15min or longer depending on the power of your food processor or blender
Preheat oven to 375 degree
Blend all the crema sauce ingredients together until creamy
Heat a pan on medium heat, with a little olive oil. Pour cheese sauce in pan and cook for 5 minutes until balls form
Remove from heat and mix very well. Add water if necessary then set aside
For the chipotle lime sauce, blend all ingredients together until smooth and creamy
Spread crema on one tortilla and chipotle lime sauce on the other then place on a baking sheet
Pop the tortillas in the oven for about 5 minutes or until they are at your desired crispiness
Optional:
After removing from the oven, you can spread vegan butter (like Miyoko’s or Earth Balance) on the top of the tortillas
Sauté some colorful bell peppers, season, then add those on top or inside the tortillas before you put them in the oven
Spinach Biscuit Balls
These little green balls are heavenly. They remind me of Red Lobster’s Cheddar Bay Biscuits. It could be because of all the garlic I used, but in this batch I included pepper jack cheese instead of cheddar. Though I am mostly plant-based, I do indulge in some animal products from time to time. When I do, I focus on the quality - how was the animal treated, what did they eat, did they have access to the outdoors to roam freely? I used local eggs and organic cheese from grass-fed cows in this recipe :)
Ingredients:
10 ounces of fresh spinach
4 cups of boiling water
3 eggs
1 cup of panic bread crumbs
1 teaspoon of garlic powder*
3 slices of pepper jack cheese or 3/4 cup of shredded cheese**
Salt and pepper to taste
* I tend to add more garlic, because everything is better with garlic. 1 teaspoon is just the minimum.
**Your cheese choice is really up to you. Experiment with mozzarella, cheddar, or even parmesan.
Directions:
1. Preheat your oven to 350 F and boil a a pot of water. Just enough to cover the spinach.
2. While waiting on the water to boil, wash and trim the fresh spinach and set aside in a bowl.
3. Once the water is super boiling, pour over the spinach and let it sit for 2-3 minutes.
4. Press out any water with your hands. If you want, you can also finely chop the spinach at this point.
5. Return spinach to bowl, add the rest of the ingredients and mix well.
6. Line a long pan with parchment paper. Roll the spinach into cute little balls.
7. Bake for 20-25 minutes, or until golden.
8. Enjoy!
