Ingredients: 1 box of brownie mix. 1/2 cup unsalted butter, melted. 2 large eggs. 1 cup semi-sweet chocolate chips. 1 1/2 cups crushed chocolate mint cookies. 1/2 cup green crme de menthe. 2 cups powdered sugar. 1/4 cup unsalted butter, softened. 1/4 cup heavy cream. 1/2 teaspoon peppermint extract. Green food coloring optional. Crushed candy canes for garnish optional.
Instructions: Preheat your oven to 350F 175C and grease a 9x9 inch baking pan. In a mixing bowl, combine the brownie mix, melted butter, and eggs. Mix until well combined. Stir in the chocolate chips and crushed chocolate mint cookies into the brownie batter. Pour the brownie batter into the prepared baking pan and spread it evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. While the brownies are baking, prepare the mint layer. In a mixing bowl, beat together the softened butter, powdered sugar, crme de menthe, heavy cream, peppermint extract, and a few drops of green food coloring if desired. Mix until smooth and creamy. Once the brownies are done, let them cool completely in the pan. Then, spread the mint layer evenly over the cooled brownies. If desired, sprinkle crushed candy canes on top for a festive touch. Refrigerate the brownie bars for at least 2 hours or until the mint layer is firm. Once set, cut the Grasshopper Brownie Bars into squares and enjoy!
